Forest Biltong
Although we have only been running for a year, we have a longstanding interest in wild meat. It is a delicious source of food, with great health benefits too.

Originally used as a means of preserving meat in Africa, it has evolved over the years to become a cuisine and pretty much a lifestyle, in its own right! The first biltong was made with wild meat – probably antelope.
Now venison from wild deer offers the closest British equivalent.
We have tried making biltong from most of the of the six UK deer species and found that Fallow deer is just great!
The meat isn’t too strong (some say it has a slightly sweet taste) and it combines fantastically with the spicy flavours.
